- Remove skin of bottle gourd and grate it. - Set the gas on medium heat and add ghee in a wide bottom non stick pan. Add in the grated bottle gourd and sauté for about 5 minutes. Add the fresh cream and let it cook until it absorbs the cream and ghee starts leaving the sides. Keep stirring at all times
- Add the condensed milk, almond powder and milk powder and mix well. Keep stirring until the ghee starts leaving sides. You will need lot of patience doing this. Add in cardamom, saffron, pistachios and colour if preferred. Mix all thoroughly and cook for a minute. Transfer in a greased tray and garnish with nuts of your choice.
Lauki halwa is also commonly known as dudhi halwa. Being a south Indian, I have not tasted or tried this before anytime anywhere. Usually I don't buy this veggie often, I am not sure myself why. Vj likes kootu and adai/ dosai with it. I know there are many dishes like sabzi, kofta etc.
