Sooji, Suji or Rava is Semolina, which is a coarse flour made of a hard type of wheat, durum wheat. In the UK there are two types of semolina available coarse and fine and usually available in a golden yellow colour. Suji halwa is made with fine semolina or cream of wheat (farina), ghee, sugar and nuts. In India cream of wheat is called as suji, sooji or rava.

Instructions to make Soji (semolina) Ka Halwa:
  1. Take semolina in a bowl then add milk and food color,mix very well and soak fo 10 minute.
  2. After 10 minute heat the ghee (1/2 cup),then add cardamom,then cardamom release their aroma add soaked semolina..
  3. Keep stairing and cook until all liquid get reduce,then add sugar, water and give it nice mix and cover it until semolina get tender and soft.
  4. Now add 2 tbsp of ghee from remaining 1/2 cup and keep mixing and stirring…then add nuts..
  5. And more 2 tbsp ghee and keep mixing.keep stirring..
  6. Now add all remaining ghee,pistachio,tutti frutti, mix very well…
  7. Now in the last add kewra water and cover for 5 minute and garnish with s some nuts silver warq and chum chum.
  8. Soji ka halwa is ready,Try at your home,and enjoy.
