  2. Put the walnuts on a baking tray and & place into the oven (140 Fan/160C/Gas3) for about 10 minutes. Remove from the oven & chop finely.
  3. Add the nuts to the fruit along with all the other ingredients & mix well. Pack the mincemeat into a clean jar & keep in the fridge until ready to use.

Make up your stock cube with boiling water and add it to the mince mix. You'll want quite a thick gravy. Heat olive oil in a large stockpot or Dutch oven over medium heat. For Moroccan burgers, add chopped coriander, ground cumin and a dollop of harissa paste to lamb mince. For Spanish burgers, add smoked paprika and finely chopped chorizo to pork mince.
