Add fruit and nuts in any combo you like, sprinkle with a pinch of sea salt if using. - Slide tray in the fridge until hard they have hardened. Store bites covered in the fridge or at a very cool room temperature.

- Line a baking sheet with parchment paper. Set your sprinkles and lollipop stick out on your work surface. - Place your chocolate in a small bowl set over a pot of simmering water (make sure the bowl does not touch the water). Use a heat-proof rubber spatula to stir the chocolate until it is melted and smooth. - Or
- You can melt chocolate in microwave without any lumps. - Remove from the heat and Pour a spoonful of chocolate onto the baking parchment, using the back of the spoon to spread into a disc shape. - Place a lollipop stick onto the chocolate so it it about 1/3 into the disc and roll so it’s completely covered in chocolate.
- Then cover the chocolate with your chosen sprinkles. - Repeat until you have used all of the chocolate then leave to set for at least 30 minutes in a fridge or cool place.
