Steps to make Egg perfecto/Moglai:
- Add you measured flour in a bowl
- Salt
- Oil
- Mix
- Add enuf warm water to form a soft dough
- Cover dough nd let it rest for 15min
- Ur chopped ingredients
- Peel off the skin
- Using a fork shred it
- Break ur eggs en beat the egg
- Transfer to a bigger bowl en add onions
- Green onions
- Shredded fish
- Then your Crushed ginger en garlic
- Chopped scotch bonnet
- Add seasonings en spices
- Mix everything all together
- After 15mins kead the dough for 2 mins en divide the dough into 10 balls
- Dust flour nd roll dough out flat
- As thin as possible(as thin as samosa sheet)
- Add spoonful of ur egg mix
- Fold it as it is shown here
- Then like this
- Heat up oil in a pan at medium heat,and place in ur folded egg perfecto's upside down,nd fry on low heat then flip over
- Till golden brown,(please fry on low heat epecially the folded part)
- Serve with black tea when it cools down
